Ingredients

For the Pancakes

  • ½ cup GoodWheat Flour
  • ¼ cup Brown Sugar
  • ½ cup Rolled Oats
  • 2 Eggs, large whole
  • 2 Eggs, whites
  • ½ tsp Baking Soda
  • 2 Bananas, ripened
  • ½ tsp Cinnamon, ground
  • ¼ tsp Nutmeg, ground
  • ¼ tsp Allspice, ground
  • ¼ tsp Kosher salt

Topping

  • ½ cup Walnuts, chopped
  • 1 stick Butter
  • ¼ cup Maple Syrup
  • 1 each Banana, sliced

Method of Preparation

  1. Combine GoodWheat Flour, brown sugar, rolled oats, eggs, egg whites, baking soda, bananas, cinnamon, nutmeg, allspice and kosher salt into a blender and blend for 30 seconds until smooth.
  2. Pour into a medium sized bowl and add chopped walnuts.
  3. In a non-stick pan over medium heat, add 1 TBS of butter and spread evenly.
  4. Pour ¼ cup of pancake into the pan and let cook until bubbles form on the top and the edges are golden brown, approximately 3 minutes.
  5. Flip pancakes and let cook for an additional 2 minutes.
  6. Repeat with remaining pancake batter.
  7. Pour maple syrup over finished pancakes and garnish with sliced bananas.
